A Monday Munchie…can you believe it? I fell off the wagon after the move a bit. The weather is so nice and I love that summer time is more laid back, so i’ve been enjoying breaks here and there from the computer.
BUT, today I created a sandwich inspired by Pinterest and it was a hit for us. I deviated from this recipe to make the texture smoother for the cub and it worked really well for us. I big plus is that it is not only peanut free, but it is also mayonnaise free which means that the Hub will eat it as well.
I like to mix up lunch time and give variety. It’s one of my favorite meals with the Cub, because we talk about all of our morning adventures. Today’s adventures included coloring, playing horses and dinosaurs, a trip to the gym where the Cub pretty much dominated the toy lions while I worked out and then to the food store.
We are going to deliver some friends a meal tonight and say hello to their brand new baby, so I thought I’d throw this together for a quick and easy lunch. And it worked!

Avocado & Chickpea Sandwich Spread
Time: 10 minutes
Ingredients:
One Avocado
One cup of chickpeas
One fresh squeezed lime
2 tbsp of yogurt
1/4 cup of fresh cilantro (we grow it in our very small container garden)
I placed all the ingredients in a food processor and blended well. I placed the blended spread onto peanut free bread and it made for a delicious sandwich. I liked it so much that I actually used the extra spread as dip for some raw vegetables. Enjoy!
